Honestly, just survive his attacks and hit him when you get the chance. Not rocket science, but requires some patience.

To beat Bowser in Super Mario Galaxy, you need to wait until he does his ground pound move. When he does, the ground will glow red where he'll land. Lure him onto the blue glassy circles, and when he pounds, they'll shatter. Then, spin attack him when he's stunned!

From personal experience, Bowser can be tricky in Super Mario Galaxy. Make sure to dodge his attacks carefully and use the spin attack at the right moments. Timing is key!

You'll face Bowser a few times in Super Mario Galaxy. Typically, wait for him to attack, dodge, and then hit his tail with Mario's spin attack after he gets dizzy. Once you do this a few times, victory is yours!
