Use a strong melee hero to duel them. Heroes like Tyrion or Sigvald can usually take them down after a good fight.
Surround them with infantry and grind them down. It's not the fastest way, but it'll do the job!
Magic is your friend! Spells like Spirit Leech or Fireball can make quick work of enemy heroes.
Just throw a bunch of cavalry at them. Sure, you'll lose some horses, but it gets the job done.
