From experience, no way to see IVs beforehand. After catching, use the in-game appraisal system for accurate IV readings.

You can’t see a Pokémon's IV before catching it in Pokémon GO. You gotta catch 'em first, then appraise them via the in-game feature or use third-party tools like Calcy IV or Poké Genie.
