Landing a plane in GTA 5 is all about approach and control. Make sure you're lined up with the runway as you approach. Reduce your speed by pulling back on the throttle, and gently lower your altitude. As you get closer, deploy landing gear by pressing the designated button (L3 on controllers). Keep your approach steady and level. When you're a few feet above the runway, slowly pull back on the control stick to raise the nose of the plane slightly, and touch down gently on the rear wheels first, then let the nose wheel come down. Remember, practice makes perfect!

Ya'll are overcomplicating things. Just fly low and slow, hit the brakes (L2 or left trigger) as you touch down and try not to crash. Easy.
