Super easy! Open Pokémon GO, tap the Poké Ball > settings > Nintendo Switch. On your Switch, go to 'Settings' in Pokémon Let's Go, and choose 'Open Pokémon GO Settings'. Pair them and you're good to go!

Basically, in Pokémon GO, go to Settings and hit 'Nintendo Switch'. Then in Let's Go on Switch, open settings and link them up. Done.
