I've done this a bunch of times! Just use a network switch, connect both Xbox 360s via Ethernet cables to it, and ensure they're set to the same subnet. Works like a charm!

Nobody uses Ethernet cables anymore. Just connect both Xbox 360s to the same Wi-Fi network, and they should find each other for local multiplayer games.
