You can't do that on the Switch directly. Buy a gift card, and redeem it through your Nintendo account.

From personal experience: log into Fortnite on Switch, select V-Bucks in the Item Shop, and use your Nintendo eShop balance or linked credit card. Took me just a few minutes!

Just go to the Item Shop in Fortnite on your Switch, choose your V-Bucks package, and purchase it with your linked payment method. Done!
