Just use a Rogue with high DEX and Sleight of Hand. Walk up to the lock, press X, and pick the lock option. Simple as that!
Honestly, just make sure your character has lockpicks and a good Sleight of Hand skill. Then interact with the lock and choose to pick it. Done and done!
From my own experience, having good lockpicks and a character proficient in Sleight of Hand is key. Walk up to the lock, press X, and pick away!
