Just log out of the old account and sign in with the new one.
I had to do this last week! Just log out of Epic Games Launcher or console, then log back in with the new account credentials. Easy peasy!
Pro tip: If you're on a console, make sure to unlink your old account from your console's account settings before logging in with the new one!
