Head to the 'PlayStation Network' section in the XMB menu, scroll down to 'Sign Out,' and hit confirm!

I've done this a thousand times: Navigate to the 'PlayStation Network' icon on the XMB, press Triangle, and select 'Sign Out.' Simple as that!
