On your PS5, go to Settings > Users and Accounts > Users. Select 'Add User' and log in with the new account. Once you're logged in, open Fortnite and it will prompt you to sign in with your Epic Games account. Easy peasy!

Just switch to another PSN account on your PS5, and Fortnite will follow suit. Make sure that PSN account is linked to the different Epic Games account you want to use.

From personal experience, the simplest way is to log out of your current PSN profile and log back in with the new account you want to use. Fortnite asks for the Epic Games details once you boot it up.
