From personal experience, go to the Epic Games website, sign out of your current account, and sign in with the new one. Then link it to your Switch.

Quick fix: Unlink your Nintendo Account from your Epic Games account, then link the new one. Done and done!

You'll need to go to the Switch settings, select 'Manage Software,' and then 'Delete Save Data' for Fortnite. Next, start Fortnite and log in with the new account.
