Use a pickaxe to mine into a mountain or underground. Keep mining in a direction until you have a cave of your liking. Watch out for natural caverns!

As someone who spends way too much time on Infinity Craft, I'd say start with a good pickaxe and mine horizontally until you hit a natural cave formation. It's quicker and often comes with cool surprises!
