You can make a simple water elevator! Just use water source blocks and soul sand for the up part, and water with a magma block for the down part. Easy peasy!

Why not try a minecart elevator? Place a series of rails and minecarts stacked on top of each other. Jump in one cart, look up, and keep pressing the jump button to ascend.
