Try using the console command "forcenight" to make things spookier. Not guaranteed, but sometimes it gets them a bit aggressive.

Honestly, just hopping into Survival mode is the way to go if you want a real challenge with those creatures!
In Creative mode, creatures are peaceful and won't attack you, but you can try provoking them by hitting them with your knife. That usually gets their attention!
I once got a Stalker to nibble on me by grabbing one of their precious metal salvage pieces right in front of them. Be bold!
