Just open the Xbox app, right-click your game, and hit 'Create desktop shortcut'. If you don't see it, try running the app as admin!
You can manually create a shortcut! Find the game in the Xbox app, right-click it and select 'Create a desktop shortcut'. If that option isn't there, navigate to the game's install location (usually in the WindowsApps folder), right-click the game's executable file, and click 'Create shortcut'.
