I made one for my kid's birthday, and the trick is to add a bit of tylose powder to your fondant; it makes it easier to work with and helps the track hold its shape better. Also, for the track details, I used a food coloring pen – way easier than trying to apply tiny pieces of fondant.
Honestly, just buy a Hot Wheels playmat. It's way easier and less messy than trying to craft one out of fondant.
