Why not use the colored concrete blocks? They have a solid texture and really make the characters pop against the landscape.
Hot take: You don't really need fancy blocks. Even basic ones will do. Focus on the shapes, and it will look great no matter what!
I used wool blocks and some patience. Pick the colors you like, and look up hiragana charts for reference. You'll be amazed how cool it looks when done!
