Unfortunately, you can't manually change the time of day in Hogwarts Legacy to make it nighttime on demand. The game's world progresses through its day and night cycle automatically. So, if you're looking to roam around Hogwarts under the moonlight, you'll just have to be a bit patient and let time do its magic!
