Just play it as it is, trust me. The charm of PvZ GOTY is in its original form. Upscaling to 1080p might not give you the magic you're looking for.

For the Game of the Year Edition, you can't directly set it to 1080p in the game settings, because it's kinda old school like that. BUT, you can tweak it a bit. Go into your computer's graphics card settings and look for an option to override the game's default resolution. Set it to 1080p there. Just be warned, it might make some UI elements look smaller!

Change your display settings to stretch the screen. It's not exactly 1080p, but it fills up the screen at least.
