Easiest way? Just hit Alt + Enter when the game is running. Works like a charm!
To make Slime Rancher full screen, go to the options menu in the game and look for the 'graphics' settings. From there, you can select the full screen or windowed mode as per your preference!
Sometimes, fiddling with your display settings in your system settings can help if the in-game option doesn't quite cut it.
