Had the same issue! I found that updating the controller firmware sometimes fixes mic problems. Go to Settings > Devices & accessories > Controller > Device info > Firmware version.

Try this: Go to Settings > General > Volume & audio output > Party chat output, and tweak the volume there. Also, you can adjust the mic monitoring setting to hear how you sound.
