To mine ores in Subnautica, use the Scanner or Seaglide to locate resource deposits, then use your survival knife, drill arm, or propulsion cannon to break them down.

From personal experience, the Prawn Suit with a Drill Arm is the way to go for the big stuff. For smaller deposits, your survival knife works just fine. Happy mining!
