Easy peasy! Just hit ALT + ENTER to go into windowed mode, drag the window to the monitor you want, and hit ALT + ENTER again to go fullscreen. Ta-da!

Open Fortnite, go into the game's settings, set it to windowed mode, drag it to your desired monitor, and set it back to fullscreen. Works like a charm!
