Seriously, it's like three taps. WhatsApp > Settings > Privacy > Last Seen > Nobody. Done.

Go to the app, hit the three dots in the top right corner, select Settings, then Privacy, and change 'Last Seen' to 'Nobody'. Works like a charm.
