To pitch out in MLB The Show 23, press the left trigger (L2 on PlayStation, LT on Xbox) and then select a pitch while holding the left stick up.

When you need to pitch out, use L2 (LT on Xbox) and push the left stick up while selecting your pitch. It's a game-changer for pickoffs!
