Planting gem trees in Terraria is like hitting two birds with one stone: you get decor and resources! First, you gotta grab some gemcorns (by crafting them with an acorn and a gem at a workbench) and then find yourself some underground stone. Make sure it's not just any stone, but stone in the underground layer. Pop those gemcorns into the stone (just like planting regular trees) and wait. Boom! Gem trees. Just remember, patience is key; they take a bit to grow.

Tried planting those gem trees in my sky island because, you know, sparkle in the sky! Spoiler: It doesn't work. It has to be the underground layer or below for those shiny trees to grow. So keep it grounded, literally.
