First, add your friend using their in-game username. Then, head to the 'Friends' menu, select your friend's profile, and tap 'Challenge.' Let the showdown begin!

Honestly, the best way is to invite them over, hand them a controller, and play it on console or PC. Mobile just ain't the same!
