Playing GOG games on your Steam Deck is totally doable! First, you'll wanna add your GOG game as a non-Steam game to your Steam Library. Here's a quick rundown: on your PC, open Steam and go to 'Games' > 'Add a Non-Steam Game to My Library...'. Browse for your GOG game's .exe file and add it. Then, with Steam's Remote Play feature, you can stream the game from your PC to your Steam Deck. Easiest way? Just install the game directly on the Steam Deck. Linux and Proton got your back, making most games compatible. No need to overcomplicate with streaming or transferring from PC.

Tried playing a GOG game on my Deck, and it's hit or miss. Some work flawlessly, others...not so much. Proton's compatibility layer isn't perfect, so expect to tinker around a bit.
