Honestly, just wait for GTA 6 or play other GTA mobile games. Trying to stream GTA 5 on a phone can be a pain with lag.

I used Xbox Game Pass to play GTA 5 on my tablet and it was pretty smooth. Just make sure your internet is up to speed and you have a good controller. Playing on the touch screen is kinda hard for a game like GTA.
