To play Starfield on Xbox One X, you might need to use Xbox Cloud Gaming (if available) via an Xbox Game Pass Ultimate subscription. As of its release, Starfield is optimized for Xbox Series X and Series S, but cloud gaming can bring it to older consoles too!
