You can play Street Fighter 30th Anniversary with one Joy-Con by using it in horizontal mode. Just detach the Joy-Con from the Switch, hold it horizontally, and use the SL/SR buttons as your triggers. The smaller buttons may take some getting used to, but it's totally playable!
