You can鈥檛. Stick to the square. Kidding! Use the little crop icon to adjust for landscape or portrait!
Just upload your photo and when you're in the cropping screen, tap the two arrows icon in the bottom left. Instagram will let you choose landscape or portrait.
I do it all the time! Upload the photo, then hit that crop button to switch between landscape and portrait. Works like a charm!
