I once needed a break from audio adventures, so I just canceled my subscription. Saving those credits for later was no biggie, and re-activating was a breeze!
You can't really "pause" Audible, but you can adjust your subscription! Head to the Audible website, log in, and go to "Account Details". There, you can cancel your membership and rejoin later to save your credits, or even switch to a cheaper plan temporarily.
