To put your Xbox Series S in performance mode, head to Settings > General > TV & display options, then choose the Performance mode under the Video fidelity & overscan settings.

You can switch to performance mode on your Xbox Series S by going to Settings, then find TV & Display Options, and choose Performance mode.

From my experience, you go to Settings, then to TV & display options, where you select Performance mode under Video fidelity & overscan. Easy peasy!
