Quitting a prep mission in GTA 5 is surprisingly straightforward, but not super intuitive. If you're in the middle of the mission and decide it's not for you, simply bring up your phone by pressing up on the d-pad, navigate to the 'Job List' from the phone's menu, and then find the mission you're currently undertaking. There should be an option to quit it. Just remember, if you're playing online, quitting a mission might affect your reputation with other players. Still worth it if you need to bail and do something cooler, though.

Honestly, just fail the mission on purpose. If you can't figure out how to quit through the menus, do something that would make you fail like blowing up a mission-critical car or getting wasted. It's a bit unorthodox, but it gets the job done.

You can't quit prep missions, gotta see them through. Just blitz it and get it over with quicker.
