You can't redeem codes directly in-game on iPhone. Instead, use the Niantic reward site at <a href='https://rewards.nianticlabs.com/pokemongo/signin'>Niantic Rewards</a>.

From my experience, you can redeem codes on iPhone by visiting the Niantic Rewards page in a web browser, logging in with your Pokémon GO account, and entering the code there.
