Just go to the PSN account settings, find the 'Account Information' section, and change the email address to the new one. Easy peasy!

Head to the PlayStation website, sign in to your account, and navigate to 'Security' settings. From there, you can update your email address.

You can't exactly 'remove' an email from a PSN account, but you can replace it with a different one. Just update your account details!

I had to do this recently. Log in on your console, go to 'Settings' > 'Account Management' > 'Account Information' > 'Sign-in ID (Email Address)' and change it there.
