Easy peasy! Go to your Steam Library, right-click the game you wanna ditch, and choose 'Manage' -> 'Hide this game' from the dropdown menu. Poof! It's like it never existed. Well, almost, since it's actually just hidden and not deleted. But hey, outta sight, outta mind, right?

Actually, if you REALLY wanna remove a game from your profile and not just hide it, you gotta make it permanent. Go to 'Help' -> 'Steam Support', find the game in question, and select 'I want to permanently remove this game from my account'. Warning: This is the nuclear option. No take-backs.
