To remove grass in Roblox Studio, just go to the Terrain Editor, select 'Paint', pick the 'Air' material and paint over the grass. Boom, no more grass!
Stop the grass from growing: Terraform -> Paint -> Air -> Done!
Personal experience here: In Roblox Studio, I just used the Terrain Editor and replaced the grass with something else, like rock or sand. Works every time!
