Here's the deal: Open Skype, find the convo you want to remove, right-click on it, and choose 'Delete Conversation'. Confirm and it's history!

Deleting chats on Skype is a piece of cake! Right-click the chat, then click 'Delete Conversation'. Done and done.
From my experience, just go to the conversation, right-click, and hit 'Delete Conversation'. Confirm your choice, and voilà, no more chat!
