Walk up to the turnbuckle, press the right stick (R3) and voila! Off it comes.

To remove the turnbuckle, approach it and use the grapple button. Repeat if necessary.

It's super easy! Just walk up to the turnbuckle and press the 'grapple' button. You might need to do this a few times until it loosens up.
