I've done this a few times: take off the side panel, unscrew the blue screw, and pull out the caddy. Swap the drives and reassemble. Don't forget to format the new drive using the PS3's menu!

Just unscrew the blue screw, pull out the tray, and swap the drives. Simple as that.

Pop off that plastic cover on the side of the PS3. You'll see a blue screw to remove, then pull out the metal tray. Slide the old hard drive out, pop the new one in, and reassemble. Easy peasy!
