You can't change the main character to Yoshi. You can ride Yoshi after you unlock him by spraying the egg on the Pianta Village plaza.

Sorry to break it to ya, but you can't swap Mario out for Yoshi in Super Mario Sunshine. You can only summon and ride Yoshi after completing certain tasks.
