To reset your amiibo in Splatoon 2, just hover over the amiibo on the Switch HOME Menu, press the plus (+) button, and select "Reset amiibo". Done in a splash!

I've done this a hundred times, and it's literally a matter of pressing the plus button and selecting reset. Super easy!
