If you wanna start fresh on Hay Day, you'll need to contact Supercell support. They can help you reset your game progress. Just go to 'Settings' in-game, tap 'Help and Support', and choose 'Contact Us'.

From personal experience, I contacted Supercell through the in-game support and asked them to reset my progress. They were pretty quick and helpful!
