Just leave the game running for a bit, or take a nice fast travel to another location, and those vendors will be restocked!
To reset the ship vendors in Starfield, simply wait 48 in-game hours. You can do this quickly by finding a chair or bed to pass the time.
From personal experience, the easiest way is to engage in some missions or exploration for a couple of days in-game, and when you return, the vendors will have refreshed their inventory.
