To restart a game on your PS5, press the PS button on your controller to bring up the Control Center, select the game in question, then choose 'Close Game'. After that, reopen the game from the main menu.

Just press the PS button, highlight the game, press Options, and choose 'Close Game'. Then start it up again from the main menu.

I find it easiest to simply exit to the main menu and restart the game from there. Takes like 5 seconds.
