To restart a game on your PS5, just press the PS button, highlight the game on the home screen, press the Options button, then select Close Game. After that, start it up again from the same spot.

Simple! Press the PS button, find the game icon in your recent apps, hit the Options button on your controller, and select Close Game. Then, just reopen the game.
