You can restart Fortnite on Xbox by holding the Xbox button on your controller, navigating to Fortnite, and pressing Quit. Start it up again, and it should update!

From personal experience, quitting the game from the dashboard has always worked for me. Press the Xbox button, go to Fortnite, and select Quit. Relaunch and you're good to go!
